Super Spuds

Super Spuds are bite-sized potatoes filled with a savory sour cream mixture, accented by green olives, sun-dried tomatoes, and chives. Ingredients

  • 12 tiny new potatoes (about 1 lb.)
  • pepper
  • 2/3 cup sour cream
  • 2 Tbsp. finely chopped pimiento-stuffed green olives
  • 4 dried tomato halves, drained and finely chopped
  • few dashes bottled hot pepper sauce
  • snipped chives

Instructions

  1. Cook the potatoes, covered, in lightly salted boiling water for about 20 minutes or until just tender.
  2. Cool the potatoes to room temperature.
  3. Cut each potato in half.
  4. Using a small spoon or melon baller, remove a small scoop of potato from each half.
  5. Sprinkle each potato cavity with pepper.
  6. Combine sour cream, chopped green olives, chopped sun-dried tomatoes, and hot pepper sauce in a small bowl.
  7. Fill each potato cavity with a dollop of the sour cream mixture.
  8. Sprinkle with snipped chives.
  9. Serve at room temperature.
