- Peel ripe figs, trimming off the stem completely.
- Sprinkle with sugar and add enough water to start cooking (about 1 or 2 cups).
- Use wide kettle.
- When figs reach boiling point, mash. Cook until mixture thickens.
- Stir in strawberry gelatin.
- Cook until desired consistency.
- Pour into sterilized jars and seal while hot.
- Makes 5 pints.
