Ingredients

  • 5 lb. potatoes
  • 1 lb. bacon, fried and crumbled
  • 1/3 c. mayo
  • 1 lb. Velveeta, cubed
  • 1 small onion, chopped

Instructions

  1. Boil potatoes with skins on.
  2. When finished, peel and cube while hot.
  3. Add chopped onion and mayo.
  4. Stir in cheese.
  5. Put in greased 13 x 9-inch cake pan.
  6. Sprinkle with bacon and cheese. Bake at 350° for 30 to 40 minutes.
