Sweet Potato Bourbon Pie

Instructions
- Cook (boil or bake) potatoes; then use a potato masher strainer to get 2 cups of mashed sweet potatoes.
- Cream sugar and butter; add potatoes, eggs, nutmeg, vanilla, lemon juice and bourbon.
- Bake in unbaked pie shell (9-inch pan) at 325° for 45 minutes.
- If you don't use the pie fairly soon, you can freeze it (wrap in individual slices in plastic wrap before freezing).
