Ingredients

  • 2 c. canned corn
  • 1 c. yellow corn meal
  • 1 small onion, chopped
  • 2 Tbsp. melted fat
  • 1 tsp. salt
  • 1 can tomato sauce
  • 2 eggs, well beaten
  • 1 c. milk

Instructions

  1. Mix ingredients in the order given.
  2. Pour into a well-greased ring mold (8 inches in diameter and 2 inches deep).
  3. Set in pan of hot water; bake at 325° for 1 hour.
  4. When baked, unmold on platter; decorate with watercress.
  5. Fill center with creamed chicken; sprinkle with fine chopped parsley.
