Tarragon Tomatoes

Ingredients

  • 5 tomatoes, cut in half
  • sugar
  • 3/4 c. grated cheese (I like old-fashioned "rat trap" best)
  • 1/2 c. bread crumbs
  • 1/2 tsp. salt
  • 1/8 tsp. fresh ground pepper
  • 1/2 tsp. dried tarragon (double if fresh)

Instructions

  1. Arrange tomatoes in shallow baking dish that just holds the halves, nicely snuggled together.
  2. Sprinkle a little sugar over tomato halves.
  3. Add remaining ingredients.
  4. Bake uncovered in preheated 375° oven for about 1/2 hour.
  5. Serves 6 to 8.
