- Rinse cleaned smelts thoroughly; wipe dry.
- Season the smelts with salt, pepper and lemon juice.
- Cover; allow them to stand for 15 minutes.
- Dip the smelts in cream or milk, then roll them in cornmeal.
- Fry the smelts gently in butter, until the fish flakes easily when tested with a fork.
- Place the cooked smelts on a platter.
