Ingredients

  • 2 lb. Velveeta cheese
  • 1 can Ro-Tel tomatoes
  • 2 cans black-eyed peas
  • 1 small can chopped green chiles
  • 4 cloves garlic

Instructions

  1. Drain the black-eyed peas and mash them.
  2. In a pot, melt the Velveeta cheese over low heat.
  3. Add the Ro-Tel tomatoes, chopped green chiles, and minced garlic to the melted Velveeta and stir until combined.
  4. Fold the mixture into the mashed peas.
  5. Serve hot with corn or flour tortilla chips.
