Ingredients

  • 3 eggs
  • 2 cups brown sugar
  • 1 cup vegetable oil
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons soda
  • 3 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 3 teaspoons vanilla
  • 2 cups grated zucchini
  • 1 cup chopped nuts
  • 1/2 cup raisins

Instructions

  1. Beat eggs, brown sugar, and vegetable oil until well combined.
  2. Sift together flour, baking powder, salt, soda, cinnamon, and nutmeg.
  3. Gradually add the dry ingredients to the egg mixture, beating continuously.
  4. Stir in vanilla, grated zucchini, chopped nuts, and raisins (if using).
  5. Pour batter into a greased loaf pan.
  6. Bake at 350°F (175°C) for about 60 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before removing from the pan and slicing.
