Ingredients

  • 3 c. milk
  • 3 Tbsp. sugar
  • 3 Tbsp. lard
  • 1 Tbsp. salt
  • 3 pkg. dry yeast
  • 8 c. sifted flour
  • melted butter or lard for brushing dough

Instructions

  1. Scald milk and stir in sugar, lard and salt.
  2. Stir until lard is melted.
  3. Let cool to lukewarm.
  4. Sprinkle in the yeast.
  5. Stir until dissolved.
  6. Now add 4 cups of the sifted flour.
  7. Beat until smooth.
  8. Add the remaining 4 cups bit by bit, blending after each addition.
  9. The dough should not be too stiff.
  10. Turn out on a lightly floured board and knead until satin smooth and elastic. Place balls of dough in a greased bowl.
  11. Brush top with melted butter or lard.
  12. Cover and let rise in a warm place (about 80°) until doubled in bulk.
  13. This will take about 1 1/2 hours.
