Tofu Oatmeal

Ingredients

  • 1/5 lb. silken tofu
  • 3/4 c. skim milk
  • 1/2 c. old fashion oatmeal
  • 1/8 c. raisins
  • 1/2 small apple, diced
  • 8 medium Brazil nuts

Instructions

  1. In a bowl, mash the tofu with a potato masher.
  2. Add skim milk and oatmeal.
  3. Microwave on High for 5 minutes.
  4. Add raisins and cut up apple.
  5. Serve Brazil nuts on the side.
  6. The Brazil nuts complement the protein of the tofu which is low in sulfur containing amino acids.
