Sweet and tangy tomato preserves with a hint of cinnamon, perfect for spreading on toast or serving alongside cheeses. A delightful spread for any season.

Ingredients

  • 2 qt. yellow tomatoes
  • 3 c. sugar
  • 1 lemon
  • 1 tsp. salt
  • 1 tsp. cinnamon (optional)

Instructions

  1. Wash and dry the yellow tomatoes; slice or chunk and remove seeds if desired.
  2. Layer the tomatoes and sugar in a kettle; let stand until the sugar is dissolved.
  3. Cook for a few minutes.
  4. Add thinly sliced lemon (remove seeds) and salt; cook until thick, stirring often.
  5. Optional: add cinnamon if desired.
  6. Put the hot preserves into clear, sterilized jars and seal.
