Tomatoes Lutice

Ingredients

  • 8 thickly sliced firm tomatoes
  • 1/4 c. finely chopped fresh parsley
  • 2 cloves chopped garlic
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. vegetable oil
  • 6 Tbsp. tarragon or cider vinegar
  • 4 tsp. prepared mustard

Instructions

  1. Place tomatoes (peeled if desired) in a shallow non-metallic pan.
  2. Mix remaining ingredients.
  3. Pour over tomatoes and let stand (or refrigerate) for several hours.
  4. Serve.
  5. Serves 8.
