Ingredients

  • 1 lb. catfish fillets
  • 1/4 tsp. salt
  • dash of freshly ground pepper
  • 1 egg white
  • 1/3 cup Total cornflake crumbs

Instructions

  1. Preheat the oven to 400°F.
  2. Wash and dry the catfish fillets and cut into serving pieces.
  3. Season the fillets with 1/4 teaspoon salt and a dash of freshly ground pepper.
  4. In a small bowl, beat the egg white.
  5. Dip the fillets into the egg white, then coat with Total cornflake crumbs.
  6. Arrange the coated fillets in a single layer in a lightly oiled shallow baking dish.
  7. Bake for about 30 minutes or until the fillets look brown and crispy.
