T'S Corn Cakes

Ingredients

  • 2 eggs
  • 2 c. milk
  • 1 1/2 c. cornmeal
  • 1 tsp. salt
  • 4 Tbsp. melted butter

Instructions

  1. Beat eggs until light.
  2. Add milk.
  3. Slowly add cornmeal and salt.
  4. Mix well.
  5. Add butter.
  6. Drop by spoonfuls on hot well-greased griddle.
  7. Stir batter each time a spoonful is taken out.
  8. Brown on one side, then on the other.
  9. Makes about 40 paper thin cakes.
