- Break turkey carcass apart.
- Put in large pan and cover with water.
- Bring to a boil and simmer about 2 hours.
- Cool until you can handle.
- Strip bones off all meat.
- Discard bones.
- To broth, add celery stalks and onion.
- Cook until vegetables are tender. Add sage, salt and pepper.
- Bring to a boil.
- Add turkey bits and meal (much like mush).
- Steam for about 30 minutes.
