- Peel and grate cucumbers into a cheescloth. Tie and hang over the kitchen sink for about an hour - 2 hours depending on humidity. Squeeze out what water remains.
- Mix all ingrediants and let chill for 24 hours. Adjust salt and pepper and serve with a flat bread for dipping.
