Tzatziki (My Basic)

Ingredients

  • 2 good size cucumbers
  • 3 garlic cloves (more if they are small)
  • 2 cups plain yogurt
  • 1 TBs mint, dill or other herb in season
  • salt / pepper

Instructions

  1. Peel and grate cucumbers into a cheescloth. Tie and hang over the kitchen sink for about an hour - 2 hours depending on humidity. Squeeze out what water remains.
  2. Mix all ingrediants and let chill for 24 hours. Adjust salt and pepper and serve with a flat bread for dipping.
