Upside-Down Bacon Corn Cake

Ingredients

  • 3/4 c. yellow corn meal
  • 1 c. flour
  • 4 tsp. baking powder
  • 3/4 tsp. salt
  • 1/4 c. sugar
  • 1 egg, well beaten
  • 3 Tbsp. melted fat

Instructions

  1. Mix and sift dry ingredients.
  2. Mix egg and milk and add.
  3. Stir in fat.
  4. Pour boiling water over the bacon; drain and dry. Arrange bacon strips in bottoms of 2 (8-inch) round cake pans. Pour half the batter into each.
  5. Bake in a hot oven (425°) for about 25 minutes.
