Ingredients

  • 10 oz. firm tofu, rinsed and drained
  • 1 qt. soy milk
  • 1 Tbsp. lemon juice
  • 1/2 c. maple syrup
  • 1 Tbsp. vanilla
  • 2 tsp. cinnamon

Instructions

  1. Blend all ingredients until very smooth.
  2. Chill.
  3. Experiment with the proportions to obtain the degree of thickness and flavor you desire.
