Ingredients

  • 3 1/2 lb. pork roast (boneless)
  • 3 large tomatoes, chopped
  • 2 large onions, chopped
  • 3 cloves garlic, minced
  • 1/4 tsp. cumin seed
  • 2 small cans green chilies

Instructions

  1. Cube pork and dredge in flour, salt and pepper.
  2. Brown.
  3. Add remaining ingredients to pot.
  4. Simmer, covered, for 1 1/2 to 2 hours.
  5. Add water if necessary. Serve with warm tortillas or over rice.
  6. Serves 4.
  7. Freezes very well.
