Waffled Vegetables

Ingredients

  • 2 medium zucchini, (about 1 pound), cut into 1?2-inch-thick chunks
  • 1 large red bell pepper, about 1?2 pound), stemmed, seeded, and cut into 1?4-inch-wide strips
  • 2 tablespoons extra-virgin olive oil
  • 1/4 teaspoon salt

Instructions

  1. Preheat your waffle iron on medium.
  2. Toss the zucchini and the pepper with the olive oil and salt in a large bowl.
  3. Place as many vegetables as will fit on the waffle iron, close the lid, and cook until the zucchini has softened but is not mushy, 4 minutes.
  4. Use silicone-tipped tongs to remove the vegetables, and place them on a serving plate.
  5. Repeat Steps 3 and 4 with any remaining vegetables.
