Warm String Bean Salad

Ingredients

  • 2 Tbsp. Balsamic vinegar
  • 1 1/2 tsp. fresh lemon juice
  • 3/4 tsp. powdered mustard
  • 1/2 tsp. salt
  • freshly ground pepper
  • 1/4 c. plus 1 Tbsp. olive oil
  • 1 garlic clove, minced finely
  • 1 1/4 lb. string beans, stemmed (or 1 lb. pkg. whole frozen string beans)
  • 1/4 c. finely chopped red onion (optional)

Instructions

  1. In a small bowl combine the vinegar and lemon juice.
  2. Whisk in the mustard, salt and pepper to taste; then whisk in the oil in a thin stream.
  3. Add the garlic and season with additional salt and pepper to taste.
