Warm String Bean Salad
Ingredients
- 2 Tbsp. Balsamic vinegar ⓘ
- 1 1/2 tsp. fresh lemon juice
- 3/4 tsp. powdered mustard
- 1/2 tsp. salt
- freshly ground pepper ⓘ
- 1/4 c. plus 1 Tbsp. olive oil ⓘ
- 1 garlic clove, minced finely ⓘ
- 1 1/4 lb. string beans, stemmed (or 1 lb. pkg. whole frozen string beans) ⓘ
- 1/4 c. finely chopped red onion (optional) ⓘ
Instructions
- In a small bowl combine the vinegar and lemon juice.
- Whisk in the mustard, salt and pepper to taste; then whisk in the oil in a thin stream.
- Add the garlic and season with additional salt and pepper to taste.
