Welsh Braised Leeks

- Melt butter in a wide, shallow saucepan, add the chopped onion and saute until it is pale gold and softened.
- Trim and wash the leeks thoroughly; add them to saucepan.
- Pour in a cup of good stock and simmer, covered, until leeks are just tender.
- Serve on slices of buttered toast.
- Serves 4.
