Welsh Braised Leeks

Ingredients

  • 12 leeks
  • 1 small onion, chopped
  • 1 Tbsp. butter
  • 1 c. good stock

Instructions

  1. Melt butter in a wide, shallow saucepan, add the chopped onion and saute until it is pale gold and softened.
  2. Trim and wash the leeks thoroughly; add them to saucepan.
  3. Pour in a cup of good stock and simmer, covered, until leeks are just tender.
  4. Serve on slices of buttered toast.
  5. Serves 4.
