Wild Rice Ring

Ingredients

  • 1 (8 oz.) pkg. wild rice
  • 6 c. water
  • 1 tsp. salt
  • 1/2 c. butter or margarine, softened
  • lemon wedges
  • fresh parsley

Instructions

  1. Rinse rice under cold running water until water is clear. Combine rice, water and salt in a heavy saucepan and bring to a boil.
  2. Cover; reduce heat to low and cook 1 hour, or until rice is tender.
  3. Add butter; stir well and pack into an 8-cup ovenproof mold.
  4. Cover with foil and refrigerate overnight.
  5. Bake at 350° for 30 minutes.
  6. Unmold and garnish with parsley and lemon.
