Wild Rice Ring

- Rinse rice under cold running water until water is clear. Combine rice, water and salt in a heavy saucepan and bring to a boil.
- Cover; reduce heat to low and cook 1 hour, or until rice is tender.
- Add butter; stir well and pack into an 8-cup ovenproof mold.
- Cover with foil and refrigerate overnight.
- Bake at 350° for 30 minutes.
- Unmold and garnish with parsley and lemon.
