Ingredients

  • 1 1/2 cups wild violet blossoms
  • 3/4 cup water
  • 1 medium lime, juiced
  • 2 1/3 cups sugar
  • 1 (1 3/4 oz.) package pectin

Instructions

  1. Combine 1 1/2 cups wild violet blossoms with 3/4 cup water in a saucepan.
  2. Bring to a gentle simmer, then remove from heat and strain out the blossoms.
  3. Stir in juice of one medium lime and 2 1/3 cups sugar until dissolved.
  4. Add the pectin package and stir until fully incorporated.
  5. Return to low heat, stirring constantly until the mixture thickens and reaches a gel point.
  6. Once thickened, remove from heat and let cool slightly before transferring to sterilized jars.
  7. Seal jars and store in a cool, dark place.
  8. Refrigerate after opening and use within a few weeks.
