Ingredients

  • 2 lb. beef cubes
  • 1 onion, chopped
  • 4 medium potatoes, peeled and cubed
  • 6 carrots (1/2-inch pieces)
  • 2 c. tomato juice
  • 1 c. water
  • 2 tsp. salt
  • 3 Tbsp. tapioca
  • 1 c. frozen peas

Instructions

  1. Place all ingredients in a 9 x 13 baking dish.
  2. Cover tightly with foil.
  3. Bake at 350° for 2 1/2 to 3 hours.
  4. Can be cooked for a full day in large crock-pot.
