Zanzibar Chicken

Ingredients

  • 3 pounds chicken thighs or drumsticks
  • 2 teaspoons cinnamon ground
  • 1/2 teaspoon cloves ground
  • 1/2 teaspoon salt
  • 1 x black pepper freshly ground, to taste
  • 2 tablespoons vegetable oil
  • 1 each onions chopped
  • 1 each garlic clove, crushed through a press
  • 3/4 cups orange juice
  • 3 tablespoons raisins, seedless
  • 13 cup almonds slivered

Instructions

  1. Season chicken with cinnamon, cloves, salt and pepper.
  2. In a large frying pan, heat oil over medium-high heat.
  3. Add chicken, in batches if necessary, and cook, turning until browned, about 10 minutes.
  4. Remove and set aside.
  5. Add onion to pan.
  6. Cook until soft, about 3 minutes.
  7. Add garlic and cook 1 minute longer.
  8. Return chicken to pan.
  9. Add orange juice and raisins.
  10. Cover, reduce heat and simmer 15 minutes until chicken is tender.
  11. Garnish with almonds.
