Instructions
- Slice zucchini lengthwise and hone out insides to resemble canoes.
- Saute the insides with onion and garlic in a little water.
- Scramble the tofu and seasonings like eggs.
- Mix together with the zucchini-onion mixture and fill the inside of the zucchini halves.
- Arrange zucchini halves in a baking dish with extra filling around them and bake at 350° for 30 minutes.
