Zucchini-Lime Salad

Ingredients

  • 1 (8 oz.) can crushed pineapple, undrained
  • 1 c. shredded zucchini
  • 1 (3 oz.) pkg. lime Jell-O
  • 2 Tbsp. lime juice

Instructions

  1. Drain pineapple, saving juice; add enough water to make 1 1/4 cups.
  2. Set pineapple aside.
  3. Bring liquid to a boil; add lime Jell-O, stirring until Jell-O melts.
  4. Add lime juice; chill until mixture is consistency of unbeaten egg whites.
  5. Fold in pineapple, zucchini and Cool Whip.
  6. Pour into lightly oiled 6-cup mold.
  7. Cover and chill until firm.
  8. Yields 8 servings.
