Ingredients

  • 7 lb. cucumbers, sliced round or strips
  • 1 gal. water
  • 3 c. lime
  • 5 lb. sugar
  • 3 qt. vinegar
  • 2 Tbsp. pickling spices

Instructions

  1. Soak cucumbers in lime water for 24 hours.
  2. Drain and cover with clear water for 3 hours, changing the water once each hour.
  3. Prepare the pickle juice and heat it to boiling.
  4. Pour the hot juice over the drained cucumbers and let set overnight.
  5. The next morning, heat the mixture for 30 minutes.
  6. Place the pickles in jars while warm and seal.
