Ingredients

  • 12 to 15 medium cucumbers
  • 4 cups cider vinegar
  • 2 tablespoons mixed pickling spices
  • 5 teaspoons salt
  • 8 cups sugar

Instructions

  1. Leave cucumbers whole and cover with boiling water.
  2. Let stand at room temperature overnight.
  3. Next morning, drain and wipe cucumbers dry.
  4. Cover with boiling water again.
  5. Repeat this process for 3 more mornings.
  6. Afterward, cut cucumbers into 1/2-inch slices.
  7. Mix cider vinegar, pickling spices, salt, and sugar in a pot and bring to a boil.
  8. Pour the hot mixture over the sliced cucumbers.
  9. Let stand at room temperature for 2 days.
  10. Bring the mixture to a boil again.
  11. Pack the cucumbers into jars, seal, and process in a boiling water bath for 10 minutes.
