Ingredients

  • 1/2 cup honey
  • 2 tablespoons lemon juice
  • 1 tablespoon finely shredded orange peel
  • 1 tablespoon finely snipped candied ginger
  • 4 oranges peeled and sliced crosswise
  • 1 1/2 cups blueberries
  • 2 cups cubed honeydew melon
  • 1 1/2 cups halved strawberries
  • whole strawberries

Instructions

  1. Combine honey, lemon juice, candied ginger, and orange peel to make the dressing.
  2. Pour the dressing over the orange slices in a bowl, cover, and refrigerate for several hours or overnight.
  3. Chill the remaining fruits: blueberries, honeydew melon, strawberries, and whole strawberries.
  4. Drain the oranges, reserving the dressing.
  5. Arrange the orange slices in the bottom of a serving dish or compote.
  6. Top with a layer of blueberries, then a layer of cubed honeydew melon, and then halved strawberries.
  7. Pour the reserved dressing over the layered fruit.
  8. Garnish with additional whole strawberries, if desired.
