Instructions
- Take the steak and flour it.
- Season the beaten egg. Place the steak in the egg (a pie plate serves well for this).
- Use a good saute pan.
- Bring the oil to a slight smoke point.
- Spread the steak and egg mixture and turn fast.
- Cook for no more than 4 seconds a side.
- Serve immediately.
