Abalone Saute

Ingredients

  • 1 slice abalone, pounded lightly
  • 1 egg, beaten
  • 1 oz. saffron oil
  • season to taste

Instructions

  1. Take the steak and flour it.
  2. Season the beaten egg. Place the steak in the egg (a pie plate serves well for this).
  3. Use a good saute pan.
  4. Bring the oil to a slight smoke point.
  5. Spread the steak and egg mixture and turn fast.
  6. Cook for no more than 4 seconds a side.
  7. Serve immediately.
