Ingredients

  • 1 box Jiffy cake mix (yellow, white or lemon)
  • 1 can crushed pineapple (13 1/2 oz.), drained
  • 1 (8 oz.) pkg. cream cheese
  • 1/2 c. milk
  • pinch of salt
  • 2 pkg. vanilla instant pudding
  • 2 c. milk

Instructions

  1. Prepare cake mix.
  2. Spread in 9 x 13-inch cake pan.
  3. Bake 12 to 15 minutes.
  4. When cool, spread with crushed pineapple.
  5. Mix cream cheese, 1/2 cup milk and salt and beat until fluffy, then add pudding mix and 2 cups milk and mix well.
  6. Spread mixture over pineapple.
  7. Then spread on Cool Whip and sprinkle with toasted coconut.
