Amazing Grace Pie

Ingredients

  • 2 c. milk
  • 1/2 c. biscuit mix
  • 3/4 c. sugar
  • 4 eggs
  • 1/4 c. margarine
  • 1 1/2 tsp. coconut flavoring (can use vanilla)
  • 1 c. coconut, shredded

Instructions

  1. Preheat oven to 350°.
  2. Combine all but the 2 cups shredded coconut, in a blender.
  3. Grease 2 (9-inch) pie pans.
  4. Divide mixture into the pie pans.
  5. Let sit 3 minutes, then sprinkle 1 cup per pie of the coconut.
  6. Put in preheated oven and bake until golden brown.
  7. (Coconut makes its own crust.)
