AMIEs AMARETTI Baked APPLES

Ingredients

  • 4 tart cooking apples, such as Granny Smith
  • 1 marcarpone, to serve (if desired)
  • 1 1/2 cup apple juice
  • 2 tbsp honey
  • 4 amaretti biscuits, crushed
  • 2 tbsp ground walnuts
  • 2 tbsp ground almonds
  • 1 tbsp soft brown sugar
  • 1 tsp lemon zest
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat the oven to 180AC.
  2. Heat the apple juice and honey together in a small saucepan over low heat, until the honey melts.
  3. Set aside.
  4. To make the filing, combine the biscuits, walnuts, ground almonds, sugar, butter, lemon zest and cinnamon together in a small bowl.
  5. Core the apples and score the skin around the circumference, so that it splits nestly during cooking.
  6. Stuff the apples with amaretti filling and arrange upright in a small baking dish.
  7. Pour the syrup around the apples and bake, uncovered, for 35-45 minutes until tender.
  8. Serve drizzled with syrup, or mascarpone if desired.
