Ingredients

  • 2 cucumbers - i used lebanese cucumber
  • 250 grams fetta cheese
  • 3 tbsp olive oil
  • 3 tbsp yogurt - i used greek
  • 1 pinch salt
  • 1 pinch cracked pepper
  • 1 juice of one lemon
  • 3 cherry tomatoes - cut into quarters
  • 1 stick celery - chopped
  • 1 tsp chopped chives
  • 1 tsp chopped basil

Instructions

  1. peel strips of the cucumber skin so to leave a green white pattern and cut into about 3/4 inch chunks , using a teaspoon scoop out the inner seeds to almost the bottom and discard the seed pulp and set prepared cucumbers on paper towel to drain excess liquid .
  2. place all remaining ingredients into a bowl , except the paprika , and mix to combine all ingredient , making sure your careful not to brake up the tomatoes .
  3. spoon a little of the mixture into the centre of the cucumber cup holes till they are full .
  4. sprinkle them with the paprika , garnish with some fresh herbs and lemon wedges .
  5. enjoy .
