- Gradually add 3/4 cup of sugar, beating after each addition.
- Place egg yolks in the top of a double boiler.
- Beat egg yolks until thick.
- Add remaining 3/4 cup of sugar, lemon juice, and lemon peel to the egg yolks.
- Cook over boiling water until thick, stirring occasionally.
- Soften gelatin in 1/4 cup of water, then add to the egg yolk-lemon mixture.
- Cool the mixture.
- Fold in the beaten egg whites using a rubber spatula.
- Spread half of the angel food cake crumbs in a 9x13-inch pan.
- Pour half of the lemon mixture over the cake crumbs.
- Repeat layers with remaining crumbs and lemon mixture.
- Refrigerate overnight.
- Cut into squares and top each with a dollop of whipped topping.
