Apple Layer Cake

Ingredients

  • 4 c. peeled and chopped apples
  • 2 c. sugar
  • 3 c. all-purpose flour
  • 1/2 tsp. salt
  • 1 1/2 tsp. soda
  • 2 eggs, beaten
  • 1 1/3 c. salad oil
  • 1/4 tsp. cinnamon
  • 1 tsp. vanilla

Instructions

  1. Combine apples and sugar; toss to mix.
  2. Let stand 30 minutes. Add flour, salt and soda.
  3. Beat 1 minute on medium speed.
  4. Add eggs, oil, vanilla and cinnamon.
  5. Beat 3 minutes on medium speed. Divide batter.
  6. Pour into three 9-inch round cake pans.
  7. Bake at 350° for 25 minutes or until done.
  8. Frost cake with Coconut Pecan Frosting.
