- Cook diced apples and water until soft in a tightly covered pot, about 10 minutes.
- Mash the cooked apples until smooth.
- In a large bowl, beat the eggs slightly.
- Add sugar, cornstarch, cinnamon, lemon juice, and a pinch of salt to the mashed apples and mix well.
- Pour the apple mixture into the beaten eggs and blend thoroughly.
- Pour the filling into the pie shell.
