Ingredients

  • 3 cups diced apples, peeled
  • 1 tablespoon water
  • 3 tablespoons lemon juice
  • 1 1/4 cups sugar
  • 1 tablespoon cornstarch
  • 1/8 teaspoon cinnamon
  • 4 eggs
  • 1 pie shell

Instructions

  1. Cook diced apples and water until soft in a tightly covered pot, about 10 minutes.
  2. Mash the cooked apples until smooth.
  3. In a large bowl, beat the eggs slightly.
  4. Add sugar, cornstarch, cinnamon, lemon juice, and a pinch of salt to the mashed apples and mix well.
  5. Pour the apple mixture into the beaten eggs and blend thoroughly.
  6. Pour the filling into the pie shell.
  7. Bake at 350°F (175°C) for 1 hour or until a knife inserted in the center comes out clean.
