Apple-Scented Winter Squash

Ingredients

  • 1 cubed peeled butternut squash (about 1 1/4 pounds)
  • 1 1/2 cups apple cider or apple juice
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground nutmeg

Instructions

  1. Place squash in a large deep skillet; add apple cider. Bring to a boil; reduce heat and simmer, uncovered, 20 minutes or until squash is tender.
  2. Add butter, salt, and nutmeg; simmer 3 minutes, stirring occasionally.
