Apple Sponge Pudding

- Preheat the oven to 350°F. Lightly grease a 5-cup baking dish.
- Beat eggs in a medium bowl with an electric mixer until fluffy. Add sugar, 1 tbsp at a time, beating until thick and creamy.
- Sift flour and spice over egg mixture; fold in gently. Spoon apple pie filling into prepared dish. Pour egg mixture over the top.
- Bake 30-35 mins, or until sponge is cooked when tested with a skewer. Serve warm with a cream or ice cream, if desired.
