Apple Sponge Pudding

Ingredients

  • 2 None eggs
  • 1/4 cup sugar
  • 1/2 cup self-rising flour
  • 1/2 tsp mixed spice, such as pumpkin pie spice
  • 1 1/2 cups canned apple pie filling
  • None None Cream or ice cream, to serve

Instructions

  1. Preheat the oven to 350°F. Lightly grease a 5-cup baking dish.
  2. Beat eggs in a medium bowl with an electric mixer until fluffy. Add sugar, 1 tbsp at a time, beating until thick and creamy.
  3. Sift flour and spice over egg mixture; fold in gently. Spoon apple pie filling into prepared dish. Pour egg mixture over the top.
  4. Bake 30-35 mins, or until sponge is cooked when tested with a skewer. Serve warm with a cream or ice cream, if desired.
