Ingredients

  • 8 cups prepared apricots
  • 1 can crushed pineapple (20 oz.)
  • 5 pounds sugar
  • 2 packets Certo
  • 1/2 cup lemon juice

Instructions

  1. Grind dried apricots and soak in 3 cups boiling water for a couple of hours or overnight.
  2. Bring all ingredients—prepared apricots, crushed pineapple, sugar, lemon juice—to a boil.
  3. Boil the mixture for 1 full minute.
  4. Remove from heat and add Certo; stir for 5 minutes to prevent fruit from floating.
  5. Put the jam into jars and cover with wax.
  6. Boil jars before adding the jam to sterilize.
