Assamee Chicken
Ingredients
- 3 lbs skinless chicken, and jointed
- 2 ounces ghee (clarified butter) ⓘ
- 1 teaspoon ground black pepper ⓘ
- 3 bay leaves, crumpled ⓘ
- 1 tablespoon turmeric ⓘ
- 1 pinch chili powder ⓘ
- 1/2 teaspoon clove ⓘ
- 1 teaspoon cardamoms, split open ⓘ
- 1/2 teaspoon ground cumin ⓘ
- 1/2 teaspoon ground coriander ⓘ
- 1 teaspoon ground ginger ⓘ
- 1/2 teaspoon ground cinnamon ⓘ
- 6 garlic cloves, crushed and chopped ⓘ
- 2 onions, chopped ⓘ
- 1 cup chicken stock
Instructions
- Heat the ghee and fry all of the spiceswith the garlic.
- Add the chicken and brown all over. Add the onion and cook over low heat for 20 minutes.
- Stir in the stock and simmer 1 hour or till meat is tender.
- Serve.
