Ingredients

  • 8 flour tortillas
  • 4 small avocados
  • 2 cups grated sharp Cheddar cheese
  • 1 can green enchilada sauce
  • 1/3 cup sliced black olives

Instructions

  1. Place slices of avocados in the center of tortillas and sprinkle with cheese.
  2. Roll up the tortillas and place them in a pan sprayed with cooking spray.
  3. Pour green enchilada sauce over the rolled tortillas.
  4. Sprinkle with sliced black olives and remaining cheese.
  5. Bake at 350°F (175°C) for about 20 minutes until heated through and cheese is melted.
