Baked Doughnuts

Ingredients

  • 1 1/2 c. milk, scalded
  • 1/3 c. shortening
  • 4 Tbsp. sugar
  • 1 tsp. salt
  • 2 tsp. nutmeg
  • 1/4 tsp. cinnamon
  • 2 small cakes or compressed yeast
  • 1/4 c. lukewarm water
  • 2 eggs, beaten
  • 4 3/4 to 5 c. sifted flour

Instructions

  1. Pour hot milk over shortening, sugar, salt and spices; cool to lukewarm and add yeast which has been dissolved in lukewarm water. Add eggs; stir in flour and beat.
  2. Knead to a smooth dough.
  3. Place in a greased bowl, cover and let rise until very light.
  4. Toss on floured board and pat into 1/2-inch thickness.
  5. Cut with a 3-inch cutter and place rings 2 inches apart on buttered baking sheets. Brush with melted butter and let rise in a warm place until double in bulk.
  6. Bake at 425° for 8 to 10 minutes in oven.
  7. Remove and brush again with melted butter and roll in granulated sugar.
