Baked Herb Fillets

Ingredients

  • 4 fish fillets (about 1 1/4 lb.)
  • 1/2 c. Italian-flavored bread crumbs
  • 1/4 c. grated Parmesan cheese
  • 1/4 tsp. garlic powder
  • 1/4 tsp. salt
  • 1 egg white, lightly beaten
  • 4 to 5 new potatoes
  • 1 small lemon

Instructions

  1. Combine bread crumbs, Parmesan cheese, garlic powder and salt. Dip fillet in egg white and place fillets, one at a time, in a bag with the herb mixture.
  2. Make sure each fillet is coated. Remove and arrange fillets in a baking dish.
  3. Bake in preheated 375° oven for about 15 minutes (until fish flakes easily) or in microwave on High for 4 to 5 minutes.
