Baked Mochi Cake

Ingredients

  • 1 cube butter or margarine
  • 1 1/2 c. sugar
  • 3 eggs
  • 1 tsp. vanilla
  • 1 (12 oz.) can coconut milk or coconut cream
  • 2 c. milk
  • 3 tsp. baking powder
  • 1 (16 oz.) pkg. mochiko

Instructions

  1. Blend
  2. together butter and sugar.
  3. Beat together vanilla, coconut
  4. milk and eggs.
  5. Add egg mixture to sugar mixture. Add milk
  6. and mix well, then add baking powder and mochiko and mix again.
  7. Pour
  8. into well-greased
  9. and floured 13 x 9-inch baking dish.
  10. Place
  11. on
  12. rack
  13. one level above center of oven. Bake
  14. at 350°
  15. for
  16. 1
  17. hour.
  18. Completely cool before cutting, using a plastic knife.
