Banana Sponge

Ingredients

  • 3 mashed bananas
  • 1 Tbsp. gelatin
  • 2 Tbsp. water
  • 1/2 c. sugar
  • 2 tsp. lemon juice
  • 3 egg whites
  • 1/4 tsp. salt
  • 1 c. cream, whipped
  • 1/2 tsp. vanilla

Instructions

  1. Mash bananas with fork.
  2. Soak gelatin in water.
  3. Dissolve sugar in boiling water.
  4. Cool this mixture; stir in banana pulp. Chill the jelly until it begins to thicken.
  5. Whip it.
  6. Fold in beaten egg whites with salt.
  7. Fold into gelatin.
  8. Fill sherbet cups or a serving dish.
  9. Top with whipped cream with vanilla.
