Basic Chicken Broth

Instructions
- Put chicken and water in a stock pot.
- Cover and simmer 2 1/2 hours or until chicken is tender and falls away from the bones. Strain.
- Remove from the bones (freeze for later use).
- Refrigerate broth overnight; fat will float to the top.
- Skim and discard the fat.
